Fancy Tomato Pesto Tea Sandwiches

Today I want to share one of my favorite Tea Sandwich recipes!
It's a Fancy Tomato Pesto Tea Sandwich that tastes incredible
and looks so pretty! I've made these for open houses, book
signings and tea parties and they were always a hit!

All you need is a pack of Cherry Tomatoes, one pkg
Cream Cheese, one small jar of Basil Pesto and a loaf
of thinly sliced White Bread.

I spread the pesto mixture on the bread before
cutting out my shapes because it's a lot easier
(to me) than having to spread it on each and every
shape evenly. It's so much neater this way.

Here's the recipe!

Fancy Tomato Pesto Tea Sandwiches

1 container cherry tomatoes
1/4 cup plus 1 tbsp basil pesto
1 8 oz pkg cream cheese, softened
1 loaf thinly sliced white bread
fresh basil or parsley to garnish

Slice cherry tomatoes and place on paper towels.
Mix together basil pesto and cream cheese (I used
my hand mixer)
Spread a generous amount of pesto mixture on slices
of bread and cut out shapes with desired cookie
cutter. Place one slice of cherry tomato on each
bread shape. Put 1/2 cup of the pesto mixture into
a piping bag with a small open star tip. (I use
disposable piping bags so that I can just throw
away after use.) Pipe a small swirl of the pesto
mixture on the cherry tomato and top with
a small sprig of basil or parsley if desired.

So Delicious!! xo
