Chewy Almond Orange Cookies

As you may have noticed, I love cookie recipes that include egg whites.  I love a light and chewy cookie that goes good with a cup of tea. Today I tried a cookie called Chewy Almond Orange Biscuits. Just looking at the ingredients, I knew it would be yummy........ground almonds, orange zest, honey, sugar, & egg whites.

The recipe couldn't be easier - you just beat the egg whites to soft peaks, then add the rest of the ingredients and mix into a paste. Next you form the dough into small balls and dredge in powdered sugar.  I used my small cookie scoop to form the balls which made the process really easy. Then place the cookie balls on a baking sheet, lightly press down on the cookies with 2 fingers just to flatten them a bit and bake at 325 degrees for 18 minutes.

The cookies need to cool on the baking sheet to firm up before eating.

 I really liked this cookie. It was lightly chewy, not too sweet and had a fresh orange flavor. It would be really good with a cup of Earl Grey!
You could substitute lemon or lime zest for the orange, or try all three together for a chewy almond citrus cookie! They are also Gluten Free.
