Lovely Lemon Blossoms


 Today I baked something that I've been wanting to bake for a while.
 Paula Deen's Lemon Blossoms!

It's a really easy recipe that includes yellow cake mix and lemon instant pudding mix. You bake them in a mini muffin pan, then dip the whole cake into a lemon glaze. The recipe comes from Food Network and when I saw that the recipe had 826 (mostly great) reviews from people who have tried it, I knew I had to make them!
The recipe couldn't be easier to throw together. Then I just used my small cookie scoop to fill the pan, baked them for 12-15 minutes, then dumped them out onto a tea towel. While they were still warm, I dropped them into the lemon glaze and put them on a drying rack to set.
The recipe says that it makes 5 dozen, which would make it a good recipe to take to a brunch or shower. I just added a royal icing flower to make it pretty. If you want to add the flower, it needs to be put on immediately after you dip the cake into the glaze. The glaze begins to set very quickly. I also sprinkled them with a little sanding sugar.
These are very sweet and dense little cakes.  The tartness of the lemon glaze helps a bit with the sweetness.  They do tend to stick together when stacked on a plate, so I would recommend putting them in a mini cupcake paper before stacking.
