up! Fairy Bites!! Just looking at these cute little cookie bites makes
me smile! It brings out the kid in me! These are the kind of cookies
that would be perfect for a Doll's Tea Party with my little girl!
They are easier to make than you might think - especially if you
have an icing knife and a bench scraper. I used my bench scraper
to cut the cookies and my icing knife to move them to my baking
sheet. This knife made it so easy to move rows of cookies at
a time, then I just separated them with my finger. Don't worry
if you don't have these tools - just use a long knife to cut and
move them.

The cookies were so good and extremely addictive!! They
would make a lovely tea party favor placed in a pretty bag
with a pretty label and ribbon!
Fairy Bites
1/2 cup butter, slightly softened
1/4 cup sugar
1/4 tsp almond extract
1 1/4 cup All Purpose flour
1/4 tsp salt
4 tsp multi-colored nonpareils
Heat oven to 325 degrees. Line 8-inch square baking
pan with plastic wrap (or cut parchment to fit) leaving
1-inch overhang.
Combine butter, sugar and almond extract in medium bowl.
Beat at medium speed, scraping bowl often, until creamy.
Reduce speed to low, add flour and salt. Beat until well
mixed. Stir in nonpareils.
Knead mixture 4-5 times in bowl until dough forms a ball.
Pat dough evenly into prepared pan. Use overhang to lift
dough from pan. Cut dough into 1/2-inch squares.
Gently place squares 1/2 inch apart onto ungreased
cookie sheet. Bake approximately 15 minutes or until
bottoms just begin to brown.

I was actually planning on cutting out little hearts when I made these but the dough is rather crumbly and I was afraid it wouldn't work out so I just went with the recipe! I have a really good shortbread recipe - you can find it using my search button - "Shortbread Sandwiches with Blueberry Buttercream." Just use the shortbread recipe, adding the nonpareils to the dough and they will work beautifully for you! xo Jina

I understand using parchment paper but was shocked to read "plastic wrap".

Me again. Forgive me for not reading the recipe more thoroughly. Now I know why you can use plastic to line the pan. I think I just assumed I was going to bake that pan....but no, you take it out and cut them and put on a sheet pan to bake. Silly me...........oh well, you can delete these two posts of mine if you wish....I'd sure understand.

Hi Stacey! So glad you're giving these a try!! The original recipe says that you can bake and freeze these 2 months ahead. I'm sure you could bake them 2 days ahead with no problem, as long as you keep them in an air tight container. I know they will be a hit at your birthday party!! Thanks so much for your comment!!
DeleteI just made these this morning while breakfast was in the oven and oh my goodness they are delicious! They taste like the crust off a pop tart, however, these taste much better. Gotta love homemade! Do not leave out the almond extract! That is the secret ingredient here. I do have a question for the author though. I had a hard time mixing in the nonpareils. They sort of melted. It was difficult to get them evenly distributed as they wanted to hide in a few corners. Suggestions? Thanks!
ReplyDeleteI'm so glad you tried these Xee!! Everyone at my house loved them too!! There weren't many left by the end of the day!! I'm not sure why the nonpareils would melt. Some brands may be better than others, but I think it's probably best to buy a new bottle for this recipe. When you're kneading the dough, just kind of eyeball the nonpareils - try to spread out areas where there are more of them so that they're evenly distributed. Thanks so much!! Jina

DeleteHello! I love your blog. I would like to bake some of these today but I have no nonpareils. Could I use coloured sugar?
ReplyDeleteHmmmm, that is a good question! I think it would work, especially if your sugar is a larger grain. I just looked at another recipe for these by Good Housekeeping and it said that you could use nonpareils or sprinkles. Not sure is sprinkles refers to colored sugar. I would give it a try! ReplyDeleteI used dinosaur shaped sprinkles instead of nonpareils, and they worked really well! For cutting, I used a pizza cutter, which made it super easy and worked great. Such a great, easy to make recipe! Thank you!

DeleteJust wanted to say that this recipe is a huge hit! I've had to make several batches since I first tried it (a month ago) and have passed the link to it on many times. Also- someone asked about small cookie cutters-I've had great success rolling the dough out between sheets of parchment paper and then using small cutters (like those from Pampered Chef).

ReplyDeleteThank you for your question Deanna! To make this recipe a bit healthier, I would suggest substituting the all purpose flour for "white whole wheat flour." I also want to recommend another recipe of mine to you that is excellent to use with cookie cutters. Just go to my post "An Impromptu Barbie Tea Party" an check out the recipe for "Pink Piccadilly Shortbread." You could make the same healthy substitution for that recipe also!

(I prefer the original, but we sometimes have to be careful of nut allergies). Most recently, I baked a triple batch in holiday colours to send with my daughter's teacher gifts. They were adorable, as always, and we had plenty left for snacking at home.
